What i'd like to be able to do is set it up so that I can make an application form. Say... for a particular user type like an application for a vampire character. then when they click submit, it automatically post it to 1 particular forum.

Well they have plugins already that let you create Post Templates that the user must fill out specific entries in order to post. It posts into the thread/board that its currently in.
If you are after something that is independant of the forum and inserts data into a forum that wont be possible.
